Strawberry flavoured spumone (soft ice cream made with whipped cream) with starwberry sauce

(Spumone alla fragola con salsa di fragola)

  • 250 grams of cream for cakes
  • 2 spoons of sugar
  • some grains of table salt
  • a mix composed by a small basket of cultivated strawberries (about 120-125 grams)
  • the juice of one lemon
  • 3 spoons of concentrated strawberry syrup
Whip the cream with the appropriate device after having put, at the beginning, sugar and salt and, at the end, 3 spoons of the strawberry shake, obtained by mixing in the blender the ingredients mentioned above. Distribute the resulting mixture in 4 cups for fruit salade, put in the refrigerator in order to curdle. Put in the refrigerator also the remaining strawberry shake. At the time to serve add two spoons of strawberry shake on each cup and then serve immediately.
The presence of strawberries in the month of march may rise some perplexities. In fact this month does not represent the optimal season for this kind of fruits, but due to the rapidity in transports and due to the miracles of technology, it is possible to find the most incredible fruits during the less naturally vocated seasons, with serious damages concerning with the flavour. With our choice to present such a recipe in this month, we do not want to follow, with blind acceptance, the bad habit dominating our society: as we should practically live it, we have to take into consideration these things. In any case it is our intention to present such a recipe with a little provocation, in order to highlight, in an obvious manner, these deviation of "production" and of "market", stressing their "non-flavour" through the elaboration and the necessary additions to recoup an interesting flavour.
