Biscotti di Borgo (Bocca di dama)

(Typical biscuits from Borgo called "Lady's mouth")

  • 250 gr. of sugar
  • 180 gr. of flour
  • 50 gr. of peeled almonds both sweet and bitter
  • 6 eggs and 3 egg yolks
  • grated lemon skin

Separately whisk the egg yolks with sugar, add the flour and the egg white, whisked until stiff. Mix everything, form a Vienna loaf with almonds on the top and bake. When the cake is ready cut it in order to give to these pieces a biscuit shape.
