Frittata di luppoli o di vitalbe

(Omelette with hop or "vitalbe")

Take only the tender tops of these two herbs. Wash them and boil them lightly. Then drain them, squeeze them and chop them coarsely. Make them flavour in oil and salt adding the beaten eggs with few salt and a pinch of pepper; brown both sides of the omelette and serve it very hot.
