|Sieve 500 gr. of chestnut flour (this action is necessary otherwise the
flour can form lumps). Mix the flour with cold water and make a mixture
like the one of "migliaccio". Add a pinch of salt and pour spoons
of this batter in a pan with abundant hot oil. Fry both sides and then remove
from fire, put the fritters on blotting paper in order to dry them and sprinkle
them with sugar. Serve them very very hot.
