Take some big apples, not too ripe, peel them and remove the core.
Cut them in slices about 1 centimetre thick. Prepare a batter with the
- 100 gr. of flour
- 1 spoon of grappa
- 1 egg yolk
- salt and some cold water
Let the batter stand for many hours.
Add the egg white, which has to be whisked until stiff, dip the slices
of apple in this mixture and fry them in abundant oil.
Then sprinkle with sugar.
These kind of fritters were a typical dessert, as the ones made with
rice, for the celebration of San Giuseppe, the 19th of March. Since few
years ago this was a holiday and these cakes announced the arrival of
Spring season more than the swallow under a roof.
