Panzanella

This is a very ancient course which dates back to the Middle Age.

Put in fresh water some slices of stale home-made bread, when it is reconstituted, drain and crumble it in a salad bowl. Add some small slices of red onion, some pieces of two salad tomatoes, slices of a cucumber, a rib of celery and various basil leaves. Dress with excellent olive oil, vinegar, salt and pepper.
