Sedani, finocchi,carducci e gobbi "rifatti"

(Celery, fennel, cardoon and gobbi "rifatti")

The way to cook these vegetables is the same for each of them, so that we can take one of the mentioned vegetable as example: celery.

Clean the celery taking away the harder ribs and wash them. Chop the celery in pieces, about 6/7 centimetres long and put them in slightly sour water with lemon juice. Boil them in salted water, drain and dry them; dip them in flour and fry them in oil, then dry them in blotting paper and put them in a pot with tomato sauce and oil. Cook them for a little bit in order to flavour them and before serving them, add abundant grated Parmesan cheese.
