For this course sparrows or other small birds of the
same size are needed, but only if allowed by law. Pluck them, clean them
and burn them, but just a little bit; every bird is filled with sage,
salt, a pinch of pepper and juniper berry, then bind them with a slice
of bacon. At this moment make some kebabs alternating a filled bird with
a slice of bread and a bay leaf.
Put these kebabs on a spit and cook them on fire, but
without flame; while cooking it is important to grease them with a lock
of sage wet in oil.
