Raperonzolo, Campanula rapunculus

In Summer, during the period of its blossoming, this small plant shows a slender stem about 60-70 centimetres long and some pale blue bell-flowers. In Spring this plant is picked up to prepare the best mixed salads, and at that time it has a white thick root.

We can use the entire plant which has to be well washed in order to remove the soil from the root. The latter enriches the salad with the delicate flavour of the small tuber.
