Clematis, Clematis vitalba

In Winter, when it is possible to meet bushes covered with flocks of white down, we are sure to be in front of clematis, a sort of liana of our woods which very often hangs down from the highest leaves. In Spring one can picks up its shoots and make a sort of bunches.

Use
These shoots are boiled in abundant salted water or they can be used to prepare omelettes with eggs and cheese. Clematis can be sautéed with butter garlic and oil. This herb is extremely abundant so that it is considered an infesting plant.
