Elder-tree, Sambucus nigra

Family of caprifoliaceae

This tree normally grows near ruins of some deserted cottages, because this plant prefers ruins and the gorges of shady streams.

Use
If the flowers are left to infuse it is possible to obtain a drink suggested to cure cough and it can also be used for gargles. The flowers can be dipped in a sort of batter made with flour, water and sugar and then fried, in order to have delicious fritters; while the ripe fruits, rich of vitamin "C" can be used to prepare a good jam. The fresh juice has antineuralgic properties, and once it was employed to colour wine.
