It has the appearance of a typical Florentine osteria, yet here it is possible to taste the best that Tuscan cuisine has had to offer through the ages. The internationally-renowned chef Giuseppe Alessi has for years been sharing his experience and the fruits of his constant research into traditional Tuscan dishes. This research has taken him all the way back to Etruscan cooking, and from there through to the present day. Alessi is a tireless experimenter, who delights his numerous customers with sophisticated and tasty dishes. And he is also a perfect host, always happy to engage his guests with interesting historical-culinary information about the dishes he has prepared. We must thank Alessi if he discovered in the ancient culinary traditions two dishes extremely suitable for this site.
