Cheese is never missing from Tuscana tables. Fresh or seasoned, with
more or less flavour, cheese is a food which has for ever appeared in
the typical dishes of our region, by itself or as a supplement to other
dishes.
In this section typical cheeses can be found, produced by craftsmen from
milk, mostly sheep’s, which gets its particular flavour both from
the animal’s grazing places and from the time and way of seasoning.
