Found in kitchens the world over, Fico
d’India, Indian figs, are the magically colored fruit of the Opuntia
cactus. This base mixture also makes a delicious drink, mixed with vodka
or rum.
1 pound ripe cactus pears,
peeled
1 cup spring water
1/2 cup sugar
Combine all ingredients in a blender and process until smooth. Strain and
chill thoroughly.
Transfer to a chilled ice-cream maker and freeze according to manufacturer's
directions.
