Gnocchetti di spinaci

Prepare a mixture with

  • 1,5 kilos of spinach, but not too cooked, which need to be drained and chopped
  • 2 eggs and an egg yolk
  • 2 spoons of flour
  • 3 spoons of grated Parmesan cheese
  • some nutmeg

If the mixture should be too soft add some flour. Make little balls as big as a nut and let them stand for half an hour. Then cook this sort of small balls in salted boiled water. Dress with melted, but not fried, butter and with grated Parmesan cheese. It is possible to add to butter some sage leaves.
