Ribollita con le bruciate

This was a traditional course of Vicchio area. In the cold evenings people used to prepare big amounts of "caldarroste" (roasted chestnuts), which were eaten with "acquerello". During these evenings old people used to tell stories of ghosts and witches to the youngs.

The leftovers of chestnut were not dropped away, even they were not good to eat, and if dried, they were peeled, broken up into small pieces and put in the bread soup, which was then re-boiled. This fact increased and enriched the course. Even today it is possible to serve it because it has a taste which reminds the Middle Age.
