Risotto con il fondo del tegame

(Risotto with bottom pot sauce)

If one roasts veal or rabbit meat, at the bottom of the pot lays a tasty sauce which can be used to cook risotto.

Take this sauce from the pot and add few butter, then let the butter melt with two big spoons of broth. Add rice and then make everything cook, adding more broth when the rice starts to be dried. Serve it with abundant Parmesan cheese.
