The way to cook these vegetables is the same for each of them, so that
we can take one of the mentioned vegetable as example: celery.
Clean the celery taking away the harder ribs and wash them. Chop the
celery in pieces, about 6/7 centimetres long and put them in slightly
sour water with lemon juice. Boil them in salted water, drain and dry
them; dip them in flour and fry them in oil, then dry them in blotting
paper and put them in a pot with tomato sauce and oil. Cook them for a
little bit in order to flavour them and before serving them, add abundant
grated Parmesan cheese.
