a quite big piece of lean meat of veal and bind it very tight. Then prepare
in a pan a layer of vegetables, chopped in big pieces, (carrots, onions,
celery, parsley), add salt, pepper and olive oil, Then put the piece of
meat on the vegetables and brown it slowly until both vegetables and meat
get a good colour.
At this moment add some pieces of tomato and some broth or hot water.
Cook it very slowly for about two hours. Then cut the meat in slices and
dress them with the cooking sauce.
